This Sweet Potato Chili Is The Best Healthy Wintertime Meal

As much as I love to run, I love to eat. And since I—and the rest of the world—am practicing mindful eating with the start of this New Year, I am putting my best fork forward when digging into my dishes. This means serving up wholesome, nutritious, filling and delicious recipes.

I am no pro in the kitchen but have been using Blue Apron services for some time now—which has helped me improve in this department —and I have actually really grown to fall in love with cooking. I find it therapeutic and relaxing and I love knowing where my food is coming from.

This is a recipe taken from their meals. It is easy to make and allows for the chef to improvise and take things out or add other ingredients.

Ingredients

1 large sweet potato
2 carrots
1 yellow onion
1 can of black beans
1 can of crushed red tomatoes
1 tsp chili paste
2 tsp of olive oil
salt & pepper to taste

Instructions

  • Heat the olive oil in a pot until warm and add in peeled and diced potato, carrots, and onion.
  • After 5 minutes, add the chili paste to the desired spiciness and mix well.
  • Then add the beans, tomatoes and 3 cups of water. Let that cook for about 30 minutes. It will bubble and start to boil so stir every so often.
  • Season with salt and pepper.
  • Optional: garnish with avocado and cheese.

Customization

I am currently in a no dairy detox, so opted out of the cheese and wasn’t in the mood for avocado so did without. Adding ground turkey is another good option that would go well. Throw in some acorn and winter squash to further enhance that sweet flavor.

Adding some sour cream on top of this chili is a great option to cool it down for those who don’t like the spice. Take this ingredient out completely for those who aren’t fans.

Keep in mind that this is a dish high in carbs. This makes it great pre- or post- run. Be mindful about carb intake for the rest of the day if not exercising. It is vegetarian, and the beans serve as a good source of protein. This sweet potato chili a balanced dish nutritionally and tastes so good. Sweet potato fans will appreciate how tastey. It is best serves on that really cold winter day when craving something to warm the bones and please the belly. It is guaranteed to delight with every bite.
